Even after a feature in a Japanese article titled "Food as art: beautiful food", Francisco understands that diners derive pleasure from the full dining experience including the service, ambiance and the story of his food. Focusing on these aspects, 81 Restaurant in Tokyo, the restaurant Francisco opened with two fellow elBulli alumni, was awarded its first Michelin star in December 2013. There his creations focused on Latin American cuisine using seasonal Japanese ingredients and modernist techniques. Francisco's culinary style has influences from Spain, Japan, China and his home country of Chile, where he has worked in some of the world’s best restaurants including elBulli, Mugaritz and Boragó.
